Okay, I don’t have long and I’m not even sure I have an excuse for my lack of writing. It’s the summer holidays here and I think I could get away with saying childcare has scuppered my creativity. But that wouldn’t be true. What would be more honest would be to admit that I have an idea for a book and it’s paralysing my writing about anything else. Obviously I haven’t actually been writing that book. Gosh no! That would make sense and I’m very much against that.
So as way of an apology, an offering if you will, I want to share with you this deliciousness that I made. I’m calling them dipped flapjack bites but you don’t have to cut them into canape sized portions and spend ££ on dark chocolate. You could just slice them normally and not bother with the chocolate at all. Do as you wish. Add any dried fruit, any nuts, any zest, but this combination works well if you can’t be bothered to try a new one.

Chocolate dipped almond, sultana & orange flapjack bites
Makes 12 regular squares or many bites
Ingredients:
200g salted butter
3 tbsp sugar (caster, brown… any)
60g golden syrup
30g treacle
zest of an orange, no white pith
300g oats (any… porridge fine, rolled better)
150g sultanas
70g roughly chopped almonds
Melted dark chocolate (about 300g, maybe more) to dip or top, more almonds to decorate
Preheat the oven to 150C fan and line a 20 x 20cm tray with non stick baking parchment.
Melt the butter, sugar, golden syrup and treacle in a large saucepan over a low heat until combined. Stir in the zest. Remove from the heat and add the oats, sultanas and almonds, stir well. Spoon into the tray and press until level. (The base of a glass can be useful for this). Bake in the centre of the oven for 30 minutes. Cool on a wire rack until room temperature then chill for 2 hours minimum before cutting with a sharp knife.
If you want to dip the flapjacks then open freeze for a few hours before using a small fork/toothpick/teaspoon to swirl into melted chocolate (I melt in the microwave) before placing onto a wire rack to set. Place an almond on the top if you wish.
I’m not going to lie; these are delicious. I made them for a stag do my boyfriend is organising and I am regretting this decision now. They’re wasted on a load of drunk men off grid in Scotland. I’ll have to make some more.
