Exactly feeling like I need to refresh my meal repertoire, yesterday I bought six cookbooks on kindle that were 99p on sale. 🫣 Will I cook from any? Remains to be seen!
The Mushroom Burgers sound great, do you think they'd work without the cheese? Not all of us here are cheese eaters (plus I found parmesan an odd inclusion for a veggie burger as it's not veggie), we do love a vegetarian meal though.
I try to meal plan and make interesting things but when I'm short on time I default-buy from my Tesco favourites and end up cycling similar meals, especially things like chilli I can do in the pressure cooker because it's so straightforward. What has livened things up is a discount I got on my first so many Hello Fresh boxes - I've opted to get them monthly, and I have to skip them when youngest (ND) is home from uni, so the offer has lasted quite a while
Hello, yes I do think they'd work without Parmesan. I also think they'd work with any hard cheese. TBH you don't notice them as cheesy, more I think that the cheese adds a bit of depth and umami. I would just add few more oats in place. And yes I hear you on HF. I got really into the kits for a while and managed to get my boys to take over cooking a couple of nights a week. Not sure why we stopped. Hmmm. May need to get back on them. x
Sounds so similar to me Holly - accomplished cook but teenagers = same handful of meals on repeat because anything else is met with complaint/food goes uneaten. Broccoli , carrots, sweetcorn and green beans are the only acceptable veg. Most of my weekly dishes are the same as yours.
We have chilli con carne most weeks as I can add black beans as well as the carrot and celery and they actually really enjoy the chilli. I also do the Gousto bang bang chicken salad recipe which they look forward to - have to separate carrot and cucumber first for my son though. He's not ND but would never accept it mixed with spring onion, lettuce and chillies! Homemade lamb koftes with houmous, pittas and salad (ie cucumber and carrot - definitely no tomatoes for them) goes down well too. I used to use the recipe you made on This Morning!
I miss the days when they were fed at after school club and I could make more interesting dinners using things like cavolo nero and sweet potato for me and husband.
I love chilli so so much, but it's only liked by one child. I feel a need to make a vat given how many of the comments include chilli. Maybe a tiny batch just for me.
Those kofte kebabs were on my favourite list, and the mango chicken I used to make. I should try those again with the kids. One day we'll be back to cooking all sorts for ourselves and probably be sad we no longer have our picky customers in the house!! x
Yeah, cobblers and their barefoot kids springs to mind! My father was a master joiner and our windows literally fell out before he replaced them 🙄
We just do what works for our families and that all sounds delicious!
My neurodivergent self and son (and husband tbh!) get bored very quickly with meals. I actually keep a record of what we eat and when so it doesn’t get repeated too often. It’s a bind, but gladly we will all eat a chilli type stew and a meat ragu about once a week, so my freezer is full of these. Chilli does nachos, burritos or a poke bowl. I do a quick pickle of radish, cucumber and carrot strips plus a homemade salsa usually with these dishes.
Luckily, my husband and I never met a veg we didn’t like, so that makes life easy. My son doesn’t like potatoes, parsnip or swede due to sensory issues, but that actually was a boon in disguise as it led me to wholegrain rice, spelt grains, spelt pasta and other grains like bulgar and couscous, so I think we’re healthier for it!
I feel exactly the same about veg! I make a lot of colourful lunchtime salads as an antidote to the monotony of dinnertime. I am very envious of your poke bowl. I first had one on a work trip in the US a few years ago and adored it. You have inspired me to make one now!
